Gujarati foods are very delicious and they are mostly vegetarian dishes. These tasty dishes are made with simple ingredients which are easily available in almost every season. In this topic today we are going to share three popular and delicious Gujarati breakfast dishes which are excellent in taste. The first one is a salty preparation whereas the last two are dessert recipes. Yes, Gujarati’s take dessert in breakfast also. First we are going to prepare delicious Khaman Dhokla which is a very popular dish of Gujarat. It is mainly taken as a breakfast item. The recipe is so simple and needs very simple ingredients to prepare. It is very easy to prepare and nutritious for you.
Bengal Gram Dal(pulses) 1cup, Moong Dal 1 cup, Ginger Garlic paste 1 table spoon, Salt to taste, Turmeric powder ¼ tea spoon, Butter Milk ½ cup, Sugar 1 tea spoon, Asafetida a little, Soda bi Carb ½ tea spoon, Refined oil 3 table spoon, Citric acid, Mustard seeds 1 tea spoon, Sesame seeds 1 tea spoon, Chopped coriander leaves.
First soak two types of pulses in water for about 5-6 hours. Then grind it in your mixer to make a thick paste. Now mix all other spices and ingredients with this paste in a well manner. Beat it well and cover it up. Keep it aside for at least 5 hours. Keep it in room temperature. Take another pan and pour water in it. Add oil and soda bi carb in it. Boil the whole thing and then pour it in the previously made paste.
Take a deep pan and pour 4 cups of water in it. Allow it to boil and cover it up. Now take a round plate and grease it with little amount of oil. Now pour the previously made pulse paste on the plate and keep the plate in the pan. Cover the pan with a lid and allow it to boil for 20 minutes. Remove it from the flame. Check your dhokla with a fork whether it is done or not? If your fork came clean then your kahaman dhokla is done. Set it aside to remain cool and then cut it in to square pieces with a sharp knife. Keep these pieces on the serving plate.
Now take an oak and heat refined oil in it. Now pour mustard seeds and asafetida in it. When it starts to splatter turn off your gas and pour the oil mixture over the dhoklas. Your Khaman Dhokla is now ready to serve. Do not forget to garnish with chopped coriander leaves. The second one is Shreekhand which is a popular dessert recipe of Gujarat. It is served also in the breakfast. It also tastes great and the recipe is so simple that any one can prepare it with an ease. It needs a little time to prepare. Sour Curd 8 cup, Powdered sugar 1 ½ cup, Green Cardamom powder ½ tea spoon.
Take a square shaped muslin cloth and pour the sour curd in it. Now hang it for 4 hours. Now take it in a bowl and add powdered sugar in it. Add green cardamom powder in it. If you want you can add chopped fruits of your choice in it. Mix all the things thoroughly and keep it in refrigerator. Serve it chilled. Moong Dal Kheer is another popular dish from Gujarat and it is served in breakfast to welcome the guests. It tastes so good. Moong Dal Kheer:
Moong Dal 200 gm, Milk 2 liter, powdered sugar 1 ½ cup, Ghee ½ cup, Grated Coconut 2 cup, Nutmeg powder ½ tea spoon, Pistachio and Cashew nuts 50 gm (for garnishing).
Grind moong dal first. Then pressure cooks it in ½ liter of milk until it goes soft. Now take remained milk in a thick bottomed deep pan and boil it until it reduces half. Keep it on the flame for thickening and make kheer with it. Add powdered sugar with it and stir. Now add the grated coconut with it and stir so that it may not stick at the bottom. Add previously cooked dal in it and continue to stir. Add nutmeg powder in it and mix it well. Turn your gas off and pour Moong Dal Kheer in a serving bowl. Now chop the cashews and pistachios with a sharp knife. Sprinkle the chopped dry fruits from top to garnish Moong Dal Kheer before you serve it.
