Prawn in Coconut Milk
The first dish you can try for your brunch is Prawn in Coconut Milk. The dish is very easy to prepare and also very delicious too. If you want you can use ready made coconut milk available in market or you can make it for your own as per instruction.
Prawn 4 (400 gm), Coconut 1, Onion 100 gm, Cumin 1 table spoon, Kashmiri Chili powder 1 table spoon, Turmeric powder 1 tea spoon, Garam masala powder ½ tea spoon, Ginger 20 gm, Salt and Sugar according to taste, Black pepper 1 tea spoon, Mustard oil 100 gm.
Grate the coconut first and then soak it in to Luke warm water for some time. Now strain it and separate the milk from grated coconut. Pour onion, cumin and ginger in to the grinder to make a smooth paste of spices. Wash the prawn with lemon mixed Luke warm water. Then marinate the prawn with salt, pepper and turmeric powder for 30 minutes and then fry the prawn lightly in mustard oil till it turns golden brown. Now heat oil in a nonstick pan and then add grinded spice paste. Add Kashmiri red chili powder with it and sauté it for few minutes in low flame. Add coconut milk in to it and cook it for few minutes. Then add the fried prawn in to the pan. Add salt and sugar according to taste. Cook until the gravy goes thick and sprinkle garam masala powder from top. Remove it from flame and place it in a serving plate. Your Prawn in Coconut Milk is ready to serve.
Pan Fried Chili Fish
The second one that you can serve in your brunch is Pan Fried Chili Fish. It is basically a Chinese dish that can be prepared in less than 30 minutes of time. The ingredients that are used in this recipe are easily available and the recipe is so easy that any one can make it.
Fillet of Bekti fish 10 pieces, Garlic 4 cloves, Ginger 1 tea spoon (chopped), Chili Paste ½ tea spoon, Tomato ketchup 2 tea spoon, White pepper 1 tea spoon, Salt and sugar according to taste, Egg 4, All purpose flour ½ cup, Corn flour ½ cup, Capsicum and Carrot 1 cup (finely chopped).
First take a medium sized glass bowl. Mix all purpose flour, corn flour and egg together in this bowl. Add a little water and salt in to it to make a smooth batter. Be careful that there should be no lump in this batter. Dip the bekti fillet in to this batter and deep fry the fishes. Keep the fried fish over a paper napkin. Heat refined oil in a pan. Sprinkle the chopped ginger in to the pan. Make garlic paste from the chopped garlic and it with the ginger. Sauté the spices for 2 minutes. Add the remaining spices in to it and sauté it for 5 minutes. When the oil gets separated from the spices add a little water. Add salt and sugar according to taste. Cover the pan and leave it to boil. When the gravy gets thickened add chopped capsicum and carrot. Cook the whole thing for 6-7 minutes. When the vegetables are done leave the gravy from flame. Now take a serving dish and keep all the fried fishes in it. Pour the gravy over the fried fishes. Pan fried chili fish is ready to serve.
The last dish is a rice preparation that should accompany the first two recipes. It is Cumin Rice which is very simple but tasty dish.
Basmati Rice 500 gm, Cumin 2 tea spoon, Roasted Cumin powder 1 tea spoon, Salt and sugar to taste, Refined oil 3 tea spoon.
Wash the rice in water and soak it for half an hour. Now drain the excess water. Now heat refined oil in a thick bottomed pan. Add cumin in to it and when it comes to splutter add the rice and cook for 5 minutes. Then add water and salt. Cover the pan with a lid for 20 minutes. When the rice is done and there is no excess water in the pan add sugar to taste. Also add roasted cumin powder and stir. Serve hot Cumin Rice to your guests.
