The first one is Mango Delight which basically a dessert and although it is a snack dish it can be served at the end of main course dinner or lunch. This is an ideal healthy snack for summer as we have used ripe mangoes in it. Try this dish this summer to surprise your family.
Ripe Mango pulp 2 cup, Grated coconut ½ cup, Milk 500 ml, Honey 2 table spoon, Saffron ½ table spoon, Almond 8-10 (chopped), Cardamom Powder 1 tea spoon, Cinnamon Powder ½ tea spoon (finely grinded).
Take a deep pan and boil the milk in medium heat. Cook the milk until it reduces in to half of its quantity. Now mix mango pulp, grated coconut, honey, saffron and chopped almond with this boiled milk. Cook the whole mixture for 5-6 minutes and then add powdered cardamom powder. Also add the cinnamon powder in to it. When the whole mixture gets thick consistency remove it from the flame and allow it to cool. When the mixture gets cooled pour it in to a mixer to blend it to get a smooth texture. Take a serving bowl and pour the mixture in to it to refrigerate for 5-6 hours. Take it out from refrigerator and garnish with a pinch of saffron on the top. Serve chilled Mango Delight as an afternoon snack.
The second one is delicious Mango Pyramid which is one type of mango pudding. The dish is very simple to make and at the same time it is very healthy too.
Custard Powder 40 gm, Fresh Mango Puree 100 gm (use ripe mango in this recipe), Sugar 150 gm, Milk 500 ml, Gelatin powder 2 gm.
Take 2 cup of milk and mix 40 gm custard powder with it. Now boil rest of the milk with adding sugar in to it. Cook this mixture for 8-10 minutes and stir continuously at the time of cooking. Remove it from flame and mix fresh mango puree with it. Boil ¼ cup of water and mix gelatin powder in the Luke warm water. Now mix it with the mango mixture. Take a mould and pour this mixture in to the mould. Allow to cool the mixture in the fridge till it goes set. Take this mould out of the fridge and garnish with small mango pieces. Serve chilled Mango Pyramid with fresh mango pieces.
Pineapple Upside Down Cake:
Pineapple Upside down Cake is a traditional cake which can be served as a healthy fruit snack. Try to follow each step of this recipe properly including the quantity of each ingredient to add a touch of restaurant in your home made dish.
Pineapple 6-7 slices (Fresh or Canned; used round shaped pineapple pieces for this recipe), Butter 100 gm, Sugar 2 table spoon, Glazed Cherry 11-12 no, All purpose flour 100 gm, Baking Powder 1 tea spoon, Sodium Bi Carbonate ¼ tea spoon, Soft Butter 100 gm (Unsalted), Castor Sugar/ Powdered Sugar 100 gm, Egg 2, Pineapple juice 3 table spoon.
Pre heat your oven in 200 degree centigrade. Take one ounce cake tin and grease the cake tin with butter. Now sprinkle some sugar on it and place pineapple slices over it arranging them in a circular shape. Place the glazed cherries in to the center of each slice and on the sides. Pour all purpose flour, sodium bi carbonate, baking powder, butter, sugar, egg in to a mixer to blend it well. When it get a very smooth texture pour 3 table spoons of pineapple juice in it and mix it well. Your mixture will get slightly thin consistency. Now pour this mixture evenly in to the greased cake tin over the pineapple slices. Bake this total thing in to the oven for 30 minutes. When it is done take it out from the oven and allow it to cool. Now use a spatula or a blunt knife to remove the sides of the cake from the cake tin and place a serving plate over the cake tin. Turn the cake tin quickly over the serving plate. Your Pineapple Upside down cake is ready to serve.
