Carrot delight is basically a dessert recipe which is a very easy recipe. The ingredients that are used in this dish is easily available. Try this yummy recipe today for your kids.
Grated Carrot 4, Grated Coconut 1 cup, Khoya Kheer150 gms, Sugar 100 gms, Milk 1 cup, Nutmeg powder ½ tea spoon, Cashew nut and raisin as required, Ghee 2 table spoon
Take a thick bottomed pan. Pour grated carrot and milk in to it. Allow to boil. When the carrot got soft mix grated khoya kheer in to it and mix it well with a wooden spatula. Add sugar and grated coconut in to it. Continuously stir it to avoid sticking at the bottom and keep the flame low. Add the cashew nuts and the raisins in to it. When this mixture started to remove from the side of the pan add nutmeg powder and ghee in to it. Grease a plate with ghee and spread this mixture in to it and allow cooling. You may store it in the refrigerator for 2-3 hours to set it. Cut it in to square or diamond shape and serve Carrot Delight to your kids.

Boiled carrot 1 cup, Apple juice ½ cup, Steamed tomato ¼ cup, Sour curd ¼ cup, black pepper powder 3-4 pinch, Cardamom- Cinnamon powder 3-4 pinch, Ice cubes 3-4.
Blend boiled carrot, steamed tomato, sour curd and apple juice in a blender. Pour the ice cubes in glass and then pour the smoothie from the mixer over the ice cubes. Sprinkle black pepper powder and cardamom-Cinnamon powder. Serve chilled Carrot smoothie.
Cashew and Carrot Kheer:
The last recipe is another dessert recipe. It comes with the goodness of milk and carrots. Milk is also very good for your kids as it contains vitamin A and D which is essential for healthy skin and a good vision for your kids.
Carrot 1 cup(chopped), Cashew nuts 50 gms(broken), Milk 500 ml, Ghee 2 table spoon, Sugar ¾ cup, Khoya 2 table spoon, Rose water 4 drops.
Fry the cashew nuts in a non stick pan with ghee. Separate the fried cashew nuts. Fry well the chopped carrots in same ghee. Now add milk and cook till the carrot gets soft. When the milk is reduced in to half of its quantity then adds sugar, fried cashew nuts and khoya in to the mixture. Stir continuously and when the mixture gets thick remove it from flame. Add rose water and cover it. Your cashew carrot kheer is ready to serve. Serve chilled Cashew and Carrot kheer.
