1. Lemon Chicken With Rice Or Noodles
For making this recipe you will need 2 medium boneless chicken breasts. Along with this you will also need couple of garlic cloves, 1/2 cup chicken broth, some lemon juice, parsley, oregano and some pepper. Get your non-stick pressure cooker ready and let the breasts cook slowly. Then put all of the ingredients in it and finish off on pan. You can serve this with boiled rice or egg noodles, which can be frozen too.
2. Tacos With Pork Or Refried Beans
For making this you need about 4 pounds of bones pork loin. You can also use about 2 pounds of boiled kidney beans or even canned ones. Then use some canned spicy tomatoes, a jar of canned salsa and some chillies, lime juice, garlic cloves and cumin powder. Cook the pork if using the same in a pressure cooker. Infuse it with flavors of garlic, cumin, canned tomatoes, etc. Same applies for the kidney beans, if you are using that. Since this is a frozen recipe, you can add the salsa later to the pork or even before. When serving just heat frozen packet of tacos along with the pork or kidney mixture. Place a helpful of mixture in each taco and top with salsa sauce.
3. Chocolate Brownies (makes 24)
For this recipe you need 250 grams, 200 grams of dark chocolate, 2 cups of white sugar, 2 cups of white flour, 1 cup of dark cocoa powder, 2 spoons of baking powder, a pinch of salt, some vanilla essence and 8 medium eggs. Start off by melting the butter in a medium pan. In the meantime, grease 2 – 12×9 inch aluminum baking dishes with some oil. Once the butter is melted add the sugar to it and allow it to melt, when sitting continuously. Mix all dry ingredients together like flour, baking powder, cocoa and salt. Whip 8 eggs with vanilla essence. Now switch off the heat of the butter and sugar mixture and add melted to chocolate to it. Now add this to the dry flour mixture. Mix in well but don’t over whip it. Once done, add the eggs. Bake in an 200 degree centigrade oven for about 20 minutes. Cut into slices and freeze wrapped in cling wrap.
4. Chicken Dumpling Pot
For making this recipe you will need about 6 boneless, skinless chicken breasts along with 2 cans of chicken soup, 1 cup of hot water, a diced onion, some shredded carrot, 2-3 spoons of butter. For the seasoning you will need 1 spoon of rosemary, pepper and salt. You also require a cup of milk and 1 can of Pillsbury Grands Biscuits. Take a regular crock pot and put the soup at the bottom. Then sprinkle some carrots and onions here. Then add chicken breast and some hot water. Make another layer of all the ingredients again. Finally, place butter on top and remaining onions and carrots. Do remember to season each layer. Once cooked, take it out and shred in a mixer to fine and thin pieces. Then add the crushed biscuits and milk and freeze. Reheat when serving.
5. Frozen Pasta
The best part about making frozen pasta is that you can actually use a number of sauces and freeze them separately. You can also boil and freeze an entire packet of pasta after it is boiled. So here’s a few recipes for sauces.
Pesto Pasta Sauce
Take 2 big bunches of basil, 1/2 cup pine nuts, 1/2 cup olive oil, 1 cup parmesan cheese and 3-4 cloves garlic. Mix all in a blender and freeze. Add salt and pepper to taste. Reheat before serving with pasta.
For this spicy tomato sauce you need 2 cans of tomatoes, 7-8 garlic cloves, dried chillies as per taste and salt and pepper. Sauce the chillies and garlic in olive oil. Add tomatoes and cook well. Add salt pepper, oregano, etc. as you need. Freeze in a box or zip lock pouch.
Melt 3 spoons of butter and add 3 spoons of flour. Saute till golden brown. Now add 2 cups of milk and stir well to make sure no lumps are there. Add pepper and one cup of cheese. Let it cool before freezing. When you reheat, add some hot water.
Boiling the Pasta
Boil 1 packet of pasta in about a litre of water. Add salt and oil to keep moist. Freeze in a zip lock pouch or even in a box.
