Chia Seeds French Toast
Egg (1 large), Egg White (One), Protein Powder (1/2 scoop), A dash of cinnamon, 2 slices of whole-wheat bread, Chia seeds (2 tsp)
Beat egg white and whole egg in a bowl. Mix together cinnamon and protein powder. Spray the pan with oil. Dip the bread slice in the egg. Coat the bread with the mixture on both the sides. Repeat the same process with the second bread slice. Place them on the pan. Pour the remaining mixture on top and sprinkle chia seeds. Flip and cook for another 2 minutes.
Quinoa Oatmeal Raisin Cookie
One ripe banana, Egg (one), Vanilla Extract (1/2 tsp), Oats (3 cups), Cooked Quinoa (1/2 cup), Raisins (1/4 cup) and Salt (1/2 tsp)
Preheat the oven (350 degree F). In a bowl beat the egg. Add vanilla extract and banana. Mash everything and add quinoa, raisins, oats and salt. Stir with spoon. Divide the batter and drop it on a greased sheet. Bake for 12 – 15 minutes.
Sweet Potato Pancake
Sweet Potato (1 medium size), Oat Flour (1/2 cup), Egg (1 large), 4 Egg Whites, Vanilla Extract (1/2 tsp), Plain Yogurt (1/4 cup)
Greek Yogurt (Non-fat – 1/3rd cup), Fresh Tarragon (2 tsp), Lemon zest (1 tsp), Maple Syrup (1 tsp), Smoked Salmon (6 Oz.)
Make tarragon-yogurt sauce by mixing together yogurt (1/3rd cup), finely chopped tarragon (2 tsp), zest, maple syrup and lemon juice. Store the sauce overnight in the fridge, so that yogurt soaks up all the flavours. Remove the skin of baked sweet potato and mash it until smooth. Combine the mashed sweet potato with oat flour, egg whites, egg, remaining yogurt and vanilla extract. Grease the pan and cook pancakes. Top the pancakes with generous amount of yogurt-tarrangon sauce.
Goji Cereal Greek Yogurt Parfait
Greek Yogurt (6 oz.), Whey Protein Powder (1/2 Scoop), Honey (1 tsp), Goji Berry Cereal (1/3rd cup), Ripe Mango (1/2 diced)
Combine Greek yogurt, honey and protein powder. Layer the following ingredients in a dish or tall glass – Start with granola then yogurt and finally mango pieces.
Coconut Flour (2 tbsp), Whey protein powder (unflavored – ¼ cup), 4 Eggs, Coconut Oil (3 tbsp), Grated Zucchini (1 cup), Stevia (30 drops), Cinnamon (1/2 tsp), Nutmeg (1/4 tsp), Vanilla Extract (1 tsp), Apple Cider Vinegar (1 tsp), Baking Soda (1/2 tsp)
Preheat the oven (350 degree F). Grease a muffin pan. Mix coconut flour, eggs and protein powder in a bowl until smooth. Add the remaining ingredients and mix until everything is combined. Pour the batter in the muffin tray. Bake for 20 – 25 minutes.
