Most people usually opt for store bought pasta, which is fair enough considering that most people don’t have pasta machines at home. However, there are some homemade pasta recipes that you can actually make from scratch. These include using pasta doughs that can be easily sliced say for cannelloni or lasagne or even ravioli.
So Here Are Some Quick And Easy Homemade Pasta Recipes From Scratch-
Egg Pasta Dough
This is a quick and easy pasta recipe. Take 6 eggs and about 600 grams of white strong flour. Take out the flour and make a well in the centre. Add eggs and some salt. Now knead the same really well and mix until you get a dough that is tight but not very firm. Let it rest for 20 minutes. Roll out the dough into a very thin round shape. Cut thin slices an then boil in hot water for about 2 minutes.
Eggless Pasta Dough
For this dough, you have to mix together 3 cups of flour (strong white flour) along with 1 cup of warm water and about 3-4 spoons of olive oil. Knead the dough really well and then let it rest for about 30 minutes, wrapped in a tight cling wrap. Take it out and roll it into either lasagne sheets or cannelloni rounds. Boil in hot water for about 2 minutes.
Herbed Pasta Dough
For this dough, you can use either of the above recipes. Now to this you have to add your choice of herbs that includes parsley, basil, oregano, etc. You can mix up all of these together too and let the dough rest. Remember to wash and strain the herbs really well to avoid it getting liquid.

Tomato Sauce For Pasta
Blanc 2 kgs of ripe tomatoes and then puree them roughly (after taking off the peel). In a big utensil, add some olive oil. To this add sliced cloves of garlic some dry red chillies and a bay leaf. Finally, add the sauce and then season with basic, parsley or herbs of your choice. Add salt and pepper.
White/ Cheese Sauce For Pasta
Take about 2 spoons of butter and heat it gently. To this add 2 spoons of white flour and stir this until golden brown. Now you have to 2 cup of warm milk to this mixture, stirring continuously so that lumps are not formed. Finally add about 1 cup of grated cheese and a small spoon of sugar. Season with salt and pepper.
For this, you need to cut the dough in square or rectangle shapes and boil them. Sauté onion, garlic and vegetables of your choice in a pan like baby corn, zucchini, etc. Now spread some tomato sauce (recipe above) in the dish and then put pasta sheets. Add a layer of vegetables and spread the white sauce. Then place sheets again and spread tomato sauce. Keep repeating and finally add cheese on top and bake for 20 minutes.
Roll out pasta in round shapes and boil. Sauté some onion and garlic in a pan with chopped and boiled spinach. Add ricotta cheese and some herbs of your choice. Mix well again. Now spread the mixture over the pasta sheet and roll it out. Layer with both tomato and cheese sauce and bake in an oven. You an also serve it hot without baking.
