Do you ever try Mint Leaf rice or Pudina(Indian Name of Mint leaves) rice recipe in your kitchen? It is very delicious and also it very healthy dish for you. The preparation process is so easy and it does not need any complicated cooking item. The items that are needed for this particular dish are easily available in market.
Often your child did not like to eat rice. But rice is a superb food which contains lots of carbohydrates that needed for energy for human body. This dish is a tricky way to serve them rice.
Mint Leaf Rice:
Basmati Rice 1 cup, Refined oil 2 table spoon, Cashew nuts 4-5, Cinnamon stick 1-2 inch, Black Cardamom 1, Green cardamom 2, Onion 1 (chopped), Gram masala powder ½ tea spoon, Mint leaves 1 bunch, Green Chili 2, Garlic 2-3 cloves (finely chopped), Ginger piece 2 inch (finely chopped), Cumin Seed ¾ table spoon, salt to taste, red chili powder ½ tea spoon, Lemon juice 1 tea spoon, bay leaves 2-3, sugar to taste.
First rinse the basmati rice with water and now soak it in water for about 20 minutes. Then strain the excess water from it and spread the soaked rice in a plate for about 15 minutes. Now take the mint leaves, ginger, garlic and green chili; put them in grinder and grind it in fine paste. Now take another thick bottomed pan and boil 2 cups of water in it.
Pour the soaked basmati rice in the boiling water and allow it to boil. When it cooked it will turns soft. Then remove it from the flame and strain the stock. When you are cooking the rice be careful that the rice must not be over cooked. Better you can make them a little stiff.Take an oak and heat 2 table spoon of refined oil in it. Add cashew nuts, bay leaves, Cardamoms and Cinnamon stick in it. When the smell comes out and it starts to splatter, add chopped onion in it. Saute the chopped onion till the onion turns transparent add garam masala powder in it. Add previously made mint leaf paste in it and cook it for 5 minutes. Add the rice in it and stir it briskly. Add lemon juice and stir again to mix it. Remove it from flame and serve hot
