Every body loves eating snacks. But to prepare some delicious and new snacks for your family in every day basis is not a very easy job. So, we are suggesting this delicious dish to present as a great snacks dish for your family.
Sweet potatoes are easily available in market almost in every season. They are basically loaded with lots of vital nutrients that are needed for your body. Stuffed sweet potato skin is very much delicious and tasty. It is healthy for your family too as we have used mushrooms and other vegetables as a stuffing.
Stuffed Sweet Potato Skin:
Sweet Potato 6 (Medium size), Onion paste 2 table spoon, Garlic paste 1 tea spoon, Ginger Spoon 1 table spoon, Turmeric Power ½ table spoon, Carrot-Cabbage-Peas 1 bowl (chopped, Medium sized bowl), Mushroom 1 cup(Chopped), Salt to taste, Tomato Puree 2 table spoon, Red chili powder ½ tea spoon, Grated cheese ½ cup.
First boil the mushrooms in a pan adding a pinch of salt in to it. When it gets soft remove it from flame. Now wash the sweet potatoes with water. Then cut them in to equal halves and scoop the inner portion of the sweet potato to make a cavity in to the potato skin. Keep the scooped portion aside. Now take nonstick pan and heat 2 table spoon of refined oil in it.
Now add the onion and garlic paste in it. Saute it for a little. Then add the ginger paste and the turmeric powder. Add the veggies now and mix it with the spices. Add salt to taste and the red chili powder. Stir it and cover the pan with a lid. Wait for 7-8 minutes or until the vegetables goes soft. Add the boiled mushrooms in it and also the scooped sweet potatoes in it. Cook it for another 5 minutes. Add tomato puree and stir. When the juice of the pan goes low put the gas off. Keep the stuffing aside to remain it cool.
Now coat the sweet potatoes with a little salt, oil and turmeric powder. Now put the skins on a non stick pan and cover the pan with a lid. After 5 minutes turn off the gas. When the sweet potato skin goes cool pour the stuffing in the potato skins. Garnish with grated cheese on the top. Now put them in a microwave and grill them for 2 minutes. When the cheese melt take them out and serve hot.
Note: Chose proper shape when you buy that. As you have to place it on the pan.
