This is a very healthy dish for your family which gives you a proper nutrition with lots of benefit of fibers. This a complete dish which keeps you full for long hours and thus works as a main course in your menu. Those who are in a weight loss diet they can easily consume it with out any worry. It is basically a sweet recipe. It is very easy recipe to prepare and comes with the goodness of Oats, egg and blue berry.
Blue Berry Oat Pancake:
All purpose flour 100gm, Egg 6 , Sugar 150 gm, Oats 200 gm, Unsalted butter 250 gm, Milk 250 ml, Canned blue berry 100 gm, Baking powder 1 table spoon, Vanilla essence 3 drops.
First boil the milk in a thick bottomed pan. Now add the oats in it and soak it for over night. On the very next day take a bowl and break the egg in it. Mix sugar with the eggs and bit it well with a blender till it turns foamy. When the mixture turns smooth stop the blending process. Now strain all purpose flour with a sieve and fold it with the egg mixture slowly. Be careful when you fold this mixture that there should be no lump in it. Now add the soaked oats mixture in it. Mix well. Melt the 2 table spoons of butter. Now add baking powder in it and melted butter. Add vanilla essence in it. Mix well to get a smooth mixture and now your batter is ready and set it aside for some time.
Now take another pan and add 100 gm of sugar in it. Now add ½ cup of water in it and boil to make sugar syrup. Then add the canned blue berry in it and cook it till all the blue berries turn soft. Your blue berry syrup is ready; keep it aside. Heat butter in a nonstick pan in keeping the flame low. Now pour the batter in the pan in a round shape. Fry till it turns golden brown color and turn the other side with the help of a spatula when one side is fried. Fry the other side till it turns golden brown. Make pancakes with this batter. Serve the oat pancakes by spreading blue berry syrup from the top.
