Egg Brunch Recipes
1. Asparagus – Soft Egg Toast
Country bread (4 slices), Asparagus (ends trimmed – 1 pound), olive oil (2 tablespoon), eggs (8), parmesan cheese (1 ounce), salt and black pepper (1/2 teaspoon each).
Place the broiler for heating and keep the asparagus and bread slices on the baking sheet. Sprinkle a little oil and spice it up with half teaspoon black pepper. Add the required salt. Toast the bread and transfer it to a plate. Cook the asparagus till it gets tender. In the mean time, boil some water in a saucepan and immerse the eggs in it. Allow it to simmer for 5 minutes and cool the eggs and peel them. Place the asparagus over the toast and sprinkle the parmesan cheese over it. Place the eggs over it to enjoy your asparagus-soft egg toast.
2. Scrambled Egg With Pepper And Mushroom
Onions (diced – ¼ cup), bell pepper (green -1/4 cup), Button mushrooms (cut up – 1/2 cup), Baby spinach (1 cup), eggs (4), cheddar cheese shredded (¼ cup), olive oil ( 2 teaspoons).
Heat 2 teaspoons olive oil in a frying pan and add bell pepper, onions and mushrooms to it. Stir intermittently till the vegetables become soft and tender. Add baby spinach and cook till it becomes saggy. Add the egg and move the pan continuously. Allow the ingredients to blend well. Once the curds start to form, put in shredded cheddar and move the egg in frying pan to set in. Serve hot.
3. Dried Cherry Popover
Unsalted butter (1 tablespoon), eggs (beaten – 3), sugar (1/4 cup), all purpose flour (3/4 cup), whole milk (1 cup), dried cherries (1/2 cup).
Preheat oven to 375 degrees. Grease a 2 quart glass baking dish with butter. Take a bowl and beat the eggs and sugar together. Whisk so that there are no lumps and add whole milk and butter to it. Blend the ingredient well to form a free flowing batter. Empty the batter into the greased dish and top it with dried cherries. Sprinkle the remaining sugar over it and bake it for 45 minutes. The dish should be baked until it is golden and puffed.
