In this topic I am sharing such lip smackingĀ mushroom recipes with you that are extremely healthy and tasty.Ā The first one is Wild Mushroom Ramen which is a very unique dish and great in taste. It is so nutritious andĀ tasty. Lots of veggies used in it and it keeps you full for a long time.
Wild Mushroom Ramen:
Ingredients:
Vegetable Oil 1 table spoon, White Button Mushroom 1 cup, White Fungus ½ cup, Beans Sprouts ¼ cup, Green Onion 2 (Chopped), Broccoli 30 gm (steamed and then blanched), Sweet corn 20 gm (boiled), Ramen noodles 200 gm.
For Preparation Of Stock:
Garlic clove 1 (chopped), Ginger 1 table spoon (Chopped), Carrot 50 gm, Spring Onion 50 gm (Chopped), Onion 50 gm,Ā Celery 30 gm, water 1 cup, Soya sauce 1 table spoon, Sugar 1 table spoon, Rice wine vinegar 1 table spoon,Ā Roasted sesame seeds 1 tea spoon (For garnishing purpose).
Methods:
Soak mushroom and white fungus in warm water. Wait for 10-15 minutes or until it goes soft. Strain the excess water and clean them in running water in a proper manner. Now heat oil in a nonstick pan. Now pour chopped onion, garlic and chopped ginger in it. Sauté it for a little. Now add the soaked mushroom and white fungus in it. Cook it for one minute more. Now prepare the stock. Take a thick bottomed pan and pour all the ingredients of stock in it. Add water, Soya sauce, sugar and rice wine in it. Cook it for half an hour till all the items are almost melting in the stock.
Take water in another pan and add a pinch of salt in it. Add ramen noodles in it and boil itĀ for 2-3 minutes or until it goes soft. Now take your serving dish and first pour the boiled noodles in itĀ spreading it over the dish. Now pour the vegetable stock, mushroom, onion, broccoli, corn and beans sprout oneĀ after another. Garnish with roasted sesame seeds from top. Your delicious Wild Mushroom Ramen is ready to serve.Ā The second one is Wild Mushroom Risotto. And it is a complete meal. The cheese used in this recipe melted in yourĀ mouth and makes this an awesome dish.
Wild Mushroom Risotto:
Ingredients:
Arborio rice 1 ½ cup, Mushroom stock/ Vegetable stock 300 ml, White wine ½ cup, Onion 1 (small and chopped), fresh mushroom 1 cup (chop it in to slices), unsalted butter 4 table spoon, vegetable oil 1 table spoon, parmesan cheese ¼ cup (grated), Italian parsley 1 table spoon (chopped), salt to taste.
Method:
Take a middle sized saucepan and boil vegetable stock or mushroom stock in medium heat. Take another non stick pan and heat butter in that pan. Pour the sliced mushroom in it and sauté it. Take a nonstick pan, heat oil in it and 1 table spoon of unsalted butter in it. Now add chopped onion in it and cook it for 2-3 minutes. Add Arborio rice in it and cook it for 4-5 minutes. Add white wine in this pan and cook it for a while. Stir it and add mushroom stock in it. Cook until the rice goes soft. Then add 2 table spoon butter, parmesan cheese, chopped parsley and salt to taste with it. The last one is delicious and healthy mushroom soup. It is very easy to prepare.
Mushroom Soup:
Ingredients:
Olive oil 1 table spoon, Onion 4 (cut in cube shape), spring onion 1 cup (chopped), brown sugar 2 table spoon, pressed mushroom 3 cup (sliced), carrot 1 cup (finely chopped), water 2 cup, brown rice 1 ½ cup (cooked), chicken broth ¼ cup, black pepper according to taste, cold water ½ cup, refined flour 2 table spoon.
Method:
Boil olive oil in a thick bottomed big size pan. Pour onion and chopped spring onion in it. Saute it in oil for some time. Now add brown sugar in it and sauté for 5 minutes. Now add chopped mushroom and carrots in it and again cook it for 3 minutes. Add chicken broth, previously cooked rice with water and black pepper powder in it. Now take another bowl with little cold water and then add refined flour with it to form a mixture. Now add this mixture with the rice mixture. Stir the whole thing for 1 minute more. Your delicious mushroom soup is ready to serve.
