How many times when frying potato at home have you wandered about the secret behind the crispiness of french fries? How many different ways you have tried to make those damn crispy french fries. No matter how you have tried,either you have totally fried it, or it is not crispy enough. But crispy exterior and fluffy interior looks a bit far fetched to you. Origin of french fries is a bit debatable. Both French and Belgians claim it to be originated from them. It is also called Frites, Chips, Fries or Finger Chips.
It is served hot with lunch or dinner or as a separate snack dish and commonly appears is different restaurants menu. It is commonly served with Tomato, Chilli Sauce or Mayonnaise Dip. The main secret behind crispy exterior and fluffy interior is double frying. So, here it goes the recipe for perfect french fry and mayonnaise dip.

For French Fry
- Potato – 5 – 6 Big
- Sugar – 1 Tablespoon
- Corn Syrup – 1 Tablespoon
- Oil – For Deep Frying
- Salt – As per taste
For Mayonnaise Dip
- Mayonnaise – 2 Tablespoon
- Mustard Sauce – 1 Tablespoon
- Lemon – 1 Slice
- Coriander Leave – A Pinchful (Optional)
For French Fry
First peel the potatoes and slice the potatoes into 1/2 inch width slices. Now take a bowl of ice cold water and transfer the potato slices into this bowl and keep it there for 5 minutes. Take the potato slices out of water in a dry bowl.
Now take another bowl and half fill it with hot water. Add the sugar and and corn syrup and mix it thoroughly well. Transfer the potatoes into this bowl and soak it atleast for 10 minutes. Take a plate and put some paper towel on top of it.Take out the potato slices from the bowl and transfer it to this plate. Pat dry the potato slices by another paper towel and put the potato slices in the refrigerator for atleast 20 mins.
Now take a frying pan and heat the oil to medium high temperature. The oil height should be enough for deep frying the potatoes. Once the oil is hot, add the potato slices into the oil, cook it for 2 – 3 mins and take it out in a paper towel. In this phase the potato slices will hardly have any color but will remain whitish only. Allow it to cool down for long 10 mins. Make sure not to allow children near the pan as the potato slices are cold and the oil can sputter violently and spill out few hot drops. This is preparation of the fluffy interior.
Now again heat the oil, add the half fried potato slices into it and allow it to fry this time for 6 – 7 mins. The potato slices will have a light golden brown color by now. Take it out from the pan and transfer it to a plate wrapped in paper towel which will soak the excess oil. When the fries are still hot, sprinkle some salt and mix it well with the fries.
For Mayonnaise Dip
Take a small bowl, add the Mayonnaise, Mustard Sauce and 3 – 4 drops of Lemon Juice. Mix it well. Sprinkle some coriander leave and your Mayonnaise dip is ready to serve.
You can alternatively use Tomato Sauce, Chilli Sauce, Mustard Sauce or Mayonnaise along with french fries.
